Gruyère cheese should be refrigerated for safety and quality, even if unopened. Do not store at room temperature for extended periods.
Refrigerator
Unopened: 6 months; Opened: 3-4 weeks
Store unopened blocks in their original packaging. Once opened, wrap tightly in plastic wrap, aluminum foil, or place in an airtight container to prevent drying and absorption of odors. Store in the coldest part of the refrigerator.
Freezer
6 months
For best quality, wrap the block tightly in plastic wrap, then in aluminum foil or a heavy-duty freezer bag. Freezing may alter the texture, making it more crumbly, but it remains safe to eat. Thaw in the refrigerator.
Signs of Spoilage
- Visible mold (beyond surface, or on soft parts)
- Off-odor (sour, ammonia-like, or unpleasant smell)
- Slimy or sticky texture
- Significant discoloration
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Always refrigerate Gruyère cheese promptly. If left out for serving, return it to the refrigerator within the safe time limits.

Always keep cheese refrigerated at 40°F (4°C) or below.
Avoid cross-contamination by using clean utensils and cutting boards when handling cheese.
If mold appears on hard cheese, cut off at least 1 inch around and below the mold spot. Do not consume moldy soft cheeses.
Wash hands thoroughly before and after handling food.
