Once opened, Gruyère cheese should be refrigerated to maintain quality and safety.
Refrigerator
3-4 weeks
Wrap tightly in plastic wrap, then in foil or wax paper, or store in an airtight container. Store in the warmest part of the refrigerator (e.g., vegetable drawer) to prevent drying.
Freezer
6 months
Wrap tightly in plastic wrap, then in heavy-duty aluminum foil. For best quality, use within 6 months. Freezing may alter the texture slightly. Thaw in the refrigerator.
Signs of Spoilage
- Visible mold (other than intentional molds on certain cheeses, but for block Gruyère, it's a sign of spoilage if not part of the cheese)
- Off-odor (sour, ammonia-like, or putrid smell)
- Slimy or unusually hard/dry texture
- Significant discoloration
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Refrigerate cheese promptly after purchase and use. Discard any cheese left in the danger zone for too long.
Safe Handling
Always wash hands before and after handling cheese.
Avoid cross-contamination by using clean utensils and cutting boards.
If mold appears on hard cheese, cut off at least 1 inch (2.5 cm) around and below the mold spot. Do not use moldy soft cheeses.
Keep cheese refrigerated at 40°F (4°C) or below.
