Refrigeration is the primary recommended storage method for commercially packaged cheese. Unopened hard cheese may last several months in a cool, dark pantry, but refrigeration is preferred for optimal quality and safety.
Refrigerator
Opened package: 3-4 weeks; Unopened package: 6 months
After opening, wrap tightly in plastic wrap or foil, or place in an airtight container to prevent drying and mold growth. Store in the coldest part of the refrigerator.
Freezer

For best quality, freeze in small portions. Wrap tightly in plastic wrap, then in heavy-duty foil or freezer bags. Freezing may alter the texture, making it more crumbly, but it remains safe to eat.
Signs of Spoilage
- Visible mold (other than intentional mold on certain cheeses)
- Off-odor (sour, ammonia-like, or unpleasant smell)
- Slimy or sticky texture on the surface
- Significant discoloration or darkening of the cheese
Room Temperature Safety
The 'Danger Zone' for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly to unsafe levels.
Always refrigerate cheese promptly. If left out for serving, ensure it is returned to refrigeration within the safe time limits to prevent bacterial growth.
Safe Handling
Always wash hands thoroughly with soap and water before and after handling cheese.
Keep cheese refrigerated until ready to use to maintain safety and quality.
If mold appears on hard cheese, cut off at least 1 inch around and below the mold spot. Do not use the knife to cut into the clean cheese. Discard soft, crumbly, or shredded cheese with mold.
Prevent cross-contamination by using clean utensils and cutting boards for cheese.
