For optimal quality and safety, store Gruyère cheese in the refrigerator.
Refrigerator
Unopened: 6 months; Opened: 3-4 weeks
Keep tightly wrapped in plastic wrap, foil, or parchment paper, then placed in an airtight container. Store in the coldest part of the refrigerator.
Freezer
6 months
Wrap tightly in plastic wrap, then in heavy-duty aluminum foil or a freezer bag. Freezing may alter the texture, making it more crumbly, but it remains safe to eat.
Signs of Spoilage
- Visible mold (other than intentional mold on certain specialty cheeses, which Gruyère does not have).
- Off-odor, such as a sour or ammonia-like smell.
- Slimy or sticky texture.
- Significant discoloration or darkening.
Room Temperature Safety
The 'Danger Zone' for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly.
Always refrigerate Gruyère cheese promptly after purchase and use. Discard any cheese left in the danger zone for too long.
Safe Handling
Always wash hands with soap and water before and after handling cheese.
To prevent cross-contamination, use separate cutting boards and utensils for cheese and other foods, especially raw meats.
If mold appears on hard cheese, cut off at least 1 inch around and below the mold spot. Do not use the knife to cut other parts of the cheese after cutting off mold. Discard soft cheeses with mold.
Keep cheese refrigerated at 40°F (4°C) or below.
