Guacamole is highly perishable and should not be stored at room temperature. Refrigerate promptly.
Refrigerator

Store in an airtight container. Press plastic wrap directly onto the surface of the guacamole to minimize air exposure and prevent browning. Adding a thin layer of water or lime juice on top before sealing can also help.
Freezer
Not recommended for quality
While safe indefinitely at 0°F (-18°C), freezing guacamole is not recommended due to significant quality degradation, including browning and changes in texture upon thawing. If freezing, ensure it's in an airtight, freezer-safe container, pressing out as much air as possible.
Signs of Spoilage
- Significant browning or black discoloration beyond the surface layer
- Sour or off-odor
- Visible mold growth
- Slimy or watery texture
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C). Guacamole should not remain in this temperature range for extended periods.
Always refrigerate guacamole promptly. If serving at a party, keep it chilled over ice or in small batches, replenishing as needed, to ensure it stays out of the danger zone.
Safe Handling
Refrigerate guacamole within 2 hours of preparation or purchase. If the ambient temperature is above 90°F (32°C), refrigerate within 1 hour.
Always use clean utensils and containers to prevent cross-contamination.
Discard any guacamole left at room temperature for more than 2 hours (or 1 hour above 90°F/32°C).
