Raw ham is a perishable product and should not be stored at pantry temperatures.
Refrigerator
5-7 days
Store raw, cook-before-eating ham in its original packaging or tightly wrapped to prevent cross-contamination. Place on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods. Maintain refrigerator temperature at 40°F (4°C) or below.
Freezer
3-4 months
For best quality, wrap ham tightly in freezer paper, aluminum foil, or heavy-duty freezer bags. Remove as much air as possible to prevent freezer burn. Label with the date of freezing. Thaw in the refrigerator, cold water, or microwave, never at room temperature.
Signs of Spoilage
- Sour or off-odor
- Slimy or sticky texture
- Discoloration (e.g., greenish or grayish spots)
- Mold growth
Room Temperature Safety
40°F–140°F
Perishable foods, including raw ham, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is reduced to 1 hour. Discard any ham left out longer than these times.
Safe Handling
Cook all raw, cook-before-eating ham to a minimum internal temperature of 145°F (63°C) as measured with a food thermometer placed in the thickest part of the ham, then allow to rest for 3 minutes before carving or consuming.
Wash hands thoroughly with soap and water before and after handling raw ham.
Use separate cutting boards, plates, and utensils for raw ham and ready-to-eat foods to prevent cross-contamination.
Clean and sanitize all surfaces that come into contact with raw ham.
Thaw frozen ham safely in the refrigerator, in cold water (changing water every 30 minutes), or in the microwave. Never thaw at room temperature.
