Refrigerator
3-4 days
Store thawed hollandaise sauce in a tightly sealed container. Consume promptly. Reheating may cause emulsion to break.
Freezer
2-3 months
Freeze hollandaise sauce in airtight containers or heavy-duty freezer bags. Thaw in the refrigerator. Quality may be affected by freezing and thawing due to emulsion breakdown.
Signs of Spoilage
- Sour or off-odor
- Visible mold growth
- Significant discoloration
- Separation of the emulsion with an oily or watery appearance
- Unusual slimy or sticky texture
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Always keep hollandaise sauce refrigerated after thawing until ready to serve. Discard any sauce left out in the danger zone beyond the recommended time limits.
Safe Handling
Thaw frozen hollandaise sauce in the refrigerator, never at room temperature.
Do not refreeze hollandaise sauce after it has been thawed.
If reheating, do so gently over low heat or in a double boiler, stirring constantly, to avoid breaking the emulsion. Do not boil.
Avoid holding hollandaise sauce in the 'Danger Zone' (40°F-140°F / 4°C-60°C) for more than 2 hours (1 hour if above 90°F / 32°C).
