Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Always refrigerate or freeze cooked soup within 2 hours of cooking or removal from heat to prevent bacterial growth.
Safe Handling
Cool cooked soup rapidly before refrigerating or freezing. Divide large quantities into shallow containers (no more than 2 inches deep) to cool quickly.
Reheat all leftovers, including soup, to an internal temperature of 165°F (74°C).
Do not leave cooked soup at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), discard after 1 hour.
Avoid cross-contamination by using clean utensils and containers.
