Homemade stewed tomatoes, unless properly home-canned using USDA-approved methods for high-acid foods, are not safe for pantry storage. Treat as a perishable cooked food.
Refrigerator
3-4 days
Store promptly in clean, shallow, airtight containers. Ensure refrigerator temperature is maintained at 40°F (4°C) or below.
Freezer
3-4 months
For best quality, freeze in freezer-safe airtight containers or heavy-duty freezer bags. Leave headspace for expansion. Label with the date.
Signs of Spoilage
- Mold growth
- Off-odor (sour, yeasty, or fermented smell)
- Unusual discoloration
- Slimy or fuzzy texture
- Bubbling or gas production
Room Temperature Safety
40°F–140°F (4°C–60°C)
Do not leave homemade stewed tomatoes at room temperature for more than 2 hours. Discard any food left in the danger zone for too long.
Safe Handling
Refrigerate homemade stewed tomatoes within 2 hours of cooking. If the ambient temperature is above 90°F (32°C), refrigerate within 1 hour.
Reheat thoroughly to an internal temperature of 165°F (74°C) before serving.
Do not taste food to determine if it is safe. When in doubt, throw it out.
Always use clean utensils and containers to prevent cross-contamination.
