Unsafe once opened

Horchata concentrate, once opened, must be refrigerated promptly. Do not store opened concentrate at room temperature.

Refrigerator

7-10 days

Keep opened horchata concentrate tightly sealed in its original container or an airtight container. Store on an interior shelf of the refrigerator, not in the door.

Freezer

Indefinitely

While safe indefinitely from a food safety standpoint when kept at 0°F (-18°C), the quality (texture, flavor) of horchata concentrate may degrade upon freezing and thawing. Freeze in airtight, freezer-safe containers, leaving headspace for expansion.

Signs of Spoilage

  • Sour or off odor
  • Mold growth
  • Unusual discoloration
  • Fizzy appearance or sour taste (indicating fermentation)

Room Temperature Safety

2-hour rule (1 hour above 90°F/32°C)

40°F–140°F

Do not leave horchata concentrate at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), do not leave it out for more than 1 hour. Discard any concentrate left out beyond these time limits.
