Store unopened packages in a cool, dry place away from direct sunlight. Once opened, transfer to an airtight container to protect from moisture and contaminants.
Refrigerator
7-10 days (for prepared horchata)
Refrigerate prepared horchata promptly in a clean, airtight container. Do not return unused portions from serving containers to the original batch.
Freezer
3 months (for prepared horchata)
Freeze prepared horchata in airtight, freezer-safe containers, leaving headspace for expansion. Note that texture may change upon thawing (e.g., separation); stir well after thawing.
Signs of Spoilage
- Sour or off odor (for prepared horchata)
- Unusual or slimy texture (for prepared horchata)
- Visible mold growth (for prepared horchata or dry mix if exposed to moisture)
- Separation or curdling beyond normal settling (for prepared horchata)
- Clumping or hardening (for dry mix due to moisture)
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Promptly refrigerate or discard prepared horchata that has been left in the danger zone for too long.
Safe Handling
Always follow package instructions for preparation.
Refrigerate prepared horchata within 2 hours of preparation (1 hour if ambient temperature is above 90°F/32°C).
Use clean utensils and containers when preparing and serving to prevent cross-contamination.
Do not consume prepared horchata that has been left at room temperature for more than 2 hours.
