Pantry

Not Recommended

Unsafe (opened)

Opened hummus must be refrigerated immediately. Unopened, shelf-stable hummus can be stored in a cool, dry pantry until its 'Best By' date.

Refrigerator

3-4 days

Store opened hummus in an airtight container in the refrigerator at 40°F (4°C) or below.

Freezer

Not recommended for quality, but safe indefinitely at 0°F (-18°C)

While safe indefinitely from a food safety standpoint when kept at 0°F (-18°C), freezing hummus is not recommended due to significant changes in texture and flavor upon thawing. If freezing, store in an airtight, freezer-safe container, leaving headspace. Thaw in the refrigerator.

Signs of Spoilage

  • Sour or off odor
  • Visible mold growth
  • Unusual discoloration
  • Slimy or sticky texture

Room Temperature Safety

2-hour rule (1 hour above 90°F/32°C)

40°F–140°F (4°C–60°C)

Perishable foods like hummus should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), discard after 1 hour.

Expert Tips

Safe Handling

1

Reheating hummus is generally not recommended. Hummus is typically served cold or at room temperature, and heating can negatively impact its texture and flavor.

2

If hummus has been left at room temperature for more than 2 hours (1 hour if above 90°F/32°C), it should be discarded, not reheated, as reheating will not destroy toxins produced by some bacteria.

3

Always use clean utensils to scoop hummus to prevent cross-contamination.

4

Do not eat directly from the container if you plan to store leftovers to avoid introducing bacteria.
