Pantry

Not Recommended

Unsafe

Fresh/uncooked sausage should not be stored at room temperature due to rapid bacterial growth.

Refrigerator

1-2 days

Store fresh Hungarian sausage in its original packaging or tightly wrapped in plastic wrap or aluminum foil. Place on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods.

Freezer

1-2 months

For best quality, freeze fresh Hungarian sausage in airtight packaging or heavy-duty freezer bags. Thaw in the refrigerator, not at room temperature.

Signs of Spoilage

  • Sour or off-odor
  • Slimy or sticky texture
  • Dull or grayish discoloration
  • Mold growth

Room Temperature Safety

Perishable foods, including raw Hungarian sausage, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4.4°C) and 140°F (60°C).

Always refrigerate or freeze raw Hungarian sausage promptly. Discard any sausage left in the danger zone for longer than the recommended time limits.

Expert Tips

Safe Handling

1

Cook all raw Hungarian sausage to an internal temperature of 160°F (71.1°C) as measured with a food thermometer.

2

Wash hands thoroughly with soap and water for at least 20 seconds before and after handling raw meat.

3

Prevent cross-contamination by using separate cutting boards, plates, and utensils for raw and cooked meats.

4

Never place cooked food back on the same plate or cutting board that held raw meat.
