Refrigerate or freeze immediately upon purchase. Fish is highly perishable and should not be stored at room temperature.

Refrigerator

1-2 days

Store raw hybrid fish products in the coldest part of the refrigerator (40°F/4°C or below). Place in a sealed container or wrap tightly to prevent drips and cross-contamination with other foods. Consume or freeze within 1-2 days of purchase.

Freezer

2-8 months

For best quality, wrap raw hybrid fish products tightly in freezer paper, heavy-duty aluminum foil, or place in heavy-duty freezer bags. Remove as much air as possible to prevent freezer burn. Leaner fish varieties typically last longer (6-8 months) than fatty fish varieties (2-3 months).

Signs of Spoilage

  • Strong, sour, or 'fishy' odor
  • Slimy or sticky texture
  • Dull, faded, or grayish color
  • Cloudy or sunken eyes
  • Soft or mushy flesh that does not spring back when pressed
  • Mold growth

Room Temperature Safety

2-hour rule (1 hour above 90°F/32°C)

40°F–140°F (5°C–60°C)

Perishable foods, including raw hybrid fish products, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour. Discard any fish left out longer than these times.

Safe Handling

Thaw frozen fish safely in the refrigerator, under cold running water, or in the microwave. Never thaw at room temperature.

Cook all fish to an internal temperature of 145°F (63°C) as measured with a food thermometer.

Prevent cross-contamination by using separate cutting boards, utensils, and plates for raw fish and cooked foods. Wash hands thoroughly with soap and water before and after handling raw fish.

Do not refreeze thawed fish that has been at room temperature for more than 2 hours.
