For very short-term storage (1-2 days), keep in a cool, dark, well-ventilated area. Refrigeration is highly preferred for quality and safety.
Refrigerator

Store unwashed fresh chillies in a plastic bag or the crisper drawer of your refrigerator.
Freezer
10-12 months
Wash, stem, and seed chillies. They can be frozen whole, chopped, or sliced. Blanching is optional but can help retain color and texture. Pack in airtight freezer bags or containers.
Signs of Spoilage
- Soft or mushy spots
- Mold growth (fuzzy white, green, or black spots)
- Slimy texture
- Significant discoloration (beyond natural ripening)
- Off-odor
Room Temperature Safety
40°F–140°F
Fresh chillies should be refrigerated promptly. Do not leave fresh chillies at room temperature for more than 2 hours (or 1 hour if the ambient temperature is above 90°F/32°C) to prevent bacterial growth.
Safe Handling
Wash fresh chillies thoroughly under running water before use.
Wear gloves when handling hot chillies to prevent skin irritation.
Avoid touching eyes, nose, or mouth after handling chillies.
Wash hands thoroughly with soap and water after handling chillies.
Use separate cutting boards and utensils for produce to prevent cross-contamination.
