Room Temperature Safety

Per the 2-hour rule, perishable foods, including raw Italian sausage, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), this time reduces to 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Refrigerate or freeze raw Italian sausage promptly. Discard any raw sausage left in the danger zone for too long.

Expert Tips

Safe Handling

1

Cook all raw Italian sausage to an internal temperature of 160°F (71.1°C) as measured with a food thermometer.

2

Prevent cross-contamination by keeping raw sausage separate from other foods, especially ready-to-eat items.

3

Wash hands, cutting boards, utensils, and countertops with hot, soapy water after handling raw sausage.

4

Never thaw raw sausage at room temperature; thaw in the refrigerator, microwave, or under cold running water.
