Store in a cool, dry place away from direct sunlight if unripe and planning to ripen. Refrigeration is generally preferred for fresh ivy gourd.
Refrigerator
5-7 days
Store unwashed ivy gourds in a plastic bag or perforated container in the crisper drawer of the refrigerator.
Freezer
8-12 months
For best quality, blanch ivy gourds before freezing. Wash, trim, and cut into desired pieces. Blanch in boiling water for 2-3 minutes, then cool rapidly in ice water. Drain thoroughly, pat dry, and pack into airtight freezer bags or containers, removing as much air as possible.
Signs of Spoilage
- Soft spots or mushy texture
- Mold growth
- Slimy surface
- Significant discoloration (e.g., yellowing or browning)
- Off-odor
Room Temperature Safety
40°F–140°F
Perishable foods, including fresh vegetables, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), food should not be left out for more than 1 hour, as bacteria multiply rapidly in the danger zone.
Safe Handling
Wash ivy gourds thoroughly under running water before cutting or consuming.
Prevent cross-contamination by using separate cutting boards and utensils for fresh produce and raw meats.
If cooking, ensure they are cooked to desired tenderness. While often eaten raw or lightly cooked, proper hygiene is always essential.
