Store at room temperature until ripe. Once ripe, refrigerate for longer storage. Keep dry.

Store unwashed in a plastic bag or airtight container in the refrigerator's crisper drawer. Wash just before eating.

Freezer

6-12 months

Wash and dry thoroughly. Freeze whole or sliced in a single layer on a baking sheet, then transfer to freezer-safe bags or containers. Can be frozen with or without pits.

Signs of Spoilage

  • Soft spots or mushy texture
  • Mold growth (fuzzy white, green, or black spots)
  • Off-odor or fermented smell
  • Significant shriveling or discoloration

Room Temperature Safety

Perishable foods should not be left out at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), food should not be left out for more than 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

While fresh jujubes can ripen at room temperature for a few days, they should be refrigerated once ripe or if not consumed within the 2-hour rule to prevent spoilage and bacterial growth.
