Store unwashed bitter gourds in a plastic bag or perforated bag in the crisper drawer of the refrigerator. Do not wash until ready to use to prevent premature spoilage.

Freezer

10-12 months

Wash, cut into desired pieces, and blanch in boiling water for 2-3 minutes. Immediately cool in ice water, drain thoroughly, and pack in airtight freezer bags or containers, removing as much air as possible.
