Karela is a fresh vegetable and is best stored in the refrigerator to maintain freshness and quality.
Refrigerator
3-5 days
Store unwashed karela in a plastic bag or wrapped in a paper towel in the crisper drawer of the refrigerator.
Freezer
10-12 months
To freeze karela, wash thoroughly, slice or chop as desired, blanch for 2-3 minutes, then cool quickly in ice water. Drain well, pat dry, and pack into freezer-safe bags or containers, removing as much air as possible.

- Significant yellowing or browning
- Slimy surface
- Off-odor
Room Temperature Safety
40°F–140°F
Perishable foods, including cut karela, should not be left at room temperature (between 40°F and 140°F) for more than 2 hours. If the ambient temperature is above 90°F (32°C), this time reduces to 1 hour. Whole, uncut karela can last longer at room temperature, but quality will degrade.
Safe Handling
Wash karela thoroughly under running water before cutting or consuming.
Cut away any bruised, soft, or discolored areas before use.
Prevent cross-contamination by using separate cutting boards and utensils for produce and raw meats.
