Karela is a fresh vegetable and is best stored in the refrigerator to maintain freshness and quality.

Refrigerator

Store unwashed karela in a plastic bag or wrapped in a paper towel in the crisper drawer of the refrigerator.

Freezer

10-12 months

To freeze karela, wash thoroughly, slice or chop as desired, blanch for 2-3 minutes, then cool quickly in ice water. Drain well, pat dry, and pack into freezer-safe bags or containers, removing as much air as possible.
