Fresh or thawed Katafi dough should not be stored at room temperature for extended periods. Use immediately or refrigerate/freeze.
Refrigerator

Store in its original packaging or an airtight container to prevent drying. Keep at 40°F (4°C) or below.
Freezer
2-3 months
Store in original packaging or a heavy-duty freezer bag. Thaw in the refrigerator before use.
Signs of Spoilage

- Off-odor (sour, yeasty)
- Discoloration
- Slimy or sticky texture
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Promptly refrigerate or freeze Katafi Topping after purchase or preparation. Discard any topping left in the danger zone for too long.
