Due to perishable ingredients like cheese and sometimes egg, khachapuri should not be stored at room temperature for more than 2 hours. If ambient temperature is above 90°F (32°C), consume or refrigerate within 1 hour.
Refrigerator
3-4 days
Store khachapuri in an airtight container or wrapped tightly in plastic wrap and then aluminum foil to prevent drying out and absorption of odors. Reheat thoroughly before serving.
Freezer
2-3 months
For best quality, wrap individual portions or the whole khachapuri tightly in plastic wrap, then in aluminum foil, or place in a heavy-duty freezer bag. Thaw overnight in the refrigerator before reheating.
Signs of Spoilage
- Visible mold growth on the bread or cheese.
- Off-odor, such as a sour, yeasty, or unpleasant smell.
- Slimy or sticky texture on the surface.
- Significant discoloration or unusual dark spots.
Room Temperature Safety
40°F–140°F
Perishable foods, including khachapuri, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour. Bacteria multiply rapidly in the danger zone.
Safe Handling
Reheat khachapuri to an internal temperature of 165°F (74°C) using a food thermometer.
Do not leave khachapuri at room temperature for more than 2 hours (1 hour if the temperature is above 90°F/32°C).
Avoid cross-contamination by using clean utensils and surfaces when handling and serving.
