For optimal quality and safety, fresh kohlrabi should be refrigerated. Pantry storage is not recommended for extended periods as it can lead to faster spoilage and loss of quality.

Refrigerator

2-3 weeks

Remove the greens (which can be stored separately for a few days). Store the kohlrabi bulb unwashed in a plastic bag in the crisper drawer of the refrigerator.

Freezer

8-12 months

Wash, peel, and dice or slice kohlrabi. Blanch in boiling water for 3 minutes, then cool quickly in ice water. Drain thoroughly, pack into freezer-safe bags or containers, removing as much air as possible.

Signs of Spoilage

  • Soft or mushy texture
  • Mold growth
  • Off-odor
  • Significant discoloration

Room Temperature Safety

Perishable foods should not be left out at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Fresh kohlrabi, like most fresh produce, should be refrigerated promptly after purchase to maintain quality and safety. Avoid leaving it at room temperature for extended periods.
