Leafy greens require refrigeration to maintain freshness and safety. Storing at room temperature will significantly reduce shelf life and increase spoilage risk.

Refrigerator

7-10 days

Store unwashed leafy greens in a loose plastic bag or a breathable container lined with a paper towel to absorb excess moisture. Wash thoroughly under running water just before use.

Freezer

10-12 months

Blanch leafy greens before freezing to preserve quality. Wash, chop if desired, blanch in boiling water for 1-2 minutes, then immediately cool in ice water. Drain well, pat dry, and pack into airtight freezer bags or containers.

Signs of Spoilage

  • Wilting or limp texture
  • Slimy or mushy leaves
  • Off-odor (sour or unpleasant smell)
  • Discoloration (yellowing, browning, or dark spots)
  • Visible mold growth

Room Temperature Safety

2-hour rule (1 hour if above 90°F/32°C)

40°F–140°F (4°C–60°C)

Do not leave leafy greens at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), discard after 1 hour. Bacteria multiply rapidly in the danger zone.

Expert Tips

Safe Handling

1

Wash leafy greens thoroughly under running water just before eating or cooking. Do not wash until ready to use to prevent premature spoilage.

2

Remove any damaged or discolored leaves before storage or preparation.

3

Prevent cross-contamination by keeping leafy greens separate from raw meat, poultry, seafood, and eggs.

4

Use separate cutting boards and utensils for produce and raw animal products.
