Leafy greens require refrigeration to maintain freshness and prevent spoilage. Storing at room temperature will cause rapid wilting and spoilage.
Refrigerator
3-7 days
Store unwashed leafy greens in a loose plastic bag or breathable container lined with a paper towel to absorb excess moisture. Wash thoroughly under running water just before use.
Freezer
8-12 months (blanched)
Raw leafy greens do not freeze well due to their high water content, resulting in a mushy texture upon thawing. For best quality, blanch greens before freezing: wash, chop, blanch for 1-2 minutes in boiling water, cool rapidly in ice water, drain very well, and pack into freezer-safe bags or containers.
Signs of Spoilage
- Slimy or sticky texture
- Strong, unpleasant off-odor
- Significant discoloration (yellowing, browning, black spots)
- Visible mold growth
- Excessive wilting or mushiness
Room Temperature Safety
40°F–140°F (4°C–60°C)
Do not leave leafy greens at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), refrigerate or discard within 1 hour to prevent rapid bacterial growth.
Safe Handling
Wash leafy greens thoroughly under running water just before eating or cooking to remove dirt and potential pathogens.
Remove any damaged or discolored leaves before storage or consumption.
Prevent cross-contamination by keeping raw leafy greens separate from raw meat, poultry, seafood, and their juices.
Do not wash greens too far in advance of use, as excess moisture can promote bacterial growth and spoilage.
Ensure hands, cutting boards, and utensils are clean when handling leafy greens.
