Fresh leeks will wilt and lose quality quickly at room temperature. For very short-term storage (less than a day), keep in a cool, dark place.

Refrigerator

1 to 2 weeks

Wrap unwashed leeks loosely in a plastic bag or damp paper towel and store in the crisper drawer of the refrigerator. Do not wash until ready to use.

Freezer

10 to 12 months

Wash, trim, and slice leeks. Blanch for 2-3 minutes, then cool quickly in ice water, drain thoroughly, and pack into freezer-safe bags or containers, removing as much air as possible.

Signs of Spoilage

  • Slimy or mushy texture
  • Soft spots
  • Yellowing or browning of the white and light green parts
  • Off-odor
  • Visible mold

Room Temperature Safety

2-hour rule (1 hour if ambient temperature is above 90°F/32°C)

40°F–140°F (4°C–60°C)

Perishable foods, including cut leeks, should not be left at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), refrigerate or discard within 1 hour.

Expert Tips

Safe Handling

1

Wash leeks thoroughly under running water, especially between the layers, to remove any dirt or sand before use.

2

Trim off the root end and the tough, dark green tops. Only the white and light green parts are typically used.

3

Prevent cross-contamination by keeping leeks separate from raw meats, poultry, and seafood.

4

Cook leeks to desired tenderness; there is no specific internal temperature for safety as they are not a TCS (Time/Temperature Control for Safety) food requiring a kill step.
