Whole lemons can be frozen, but quality may degrade upon thawing. Sliced lemons or lemon juice frozen in ice cube trays are better for culinary use.
Signs of Spoilage
- Soft spots or mushy texture
- Mold growth (white, green, or black fuzzy spots)
- Significant discoloration or browning
- Shriveled or dried-out skin
- Off-odor
Room Temperature Safety
40°F–140°F
Perishable foods should not be left at room temperature for more than 2 hours; if the temperature is above 90°F (32°C), food should not be left out for more than 1 hour. While lemons are less perishable than some foods, prolonged exposure to the danger zone can accelerate spoilage.
Safe Handling
Wash lemons thoroughly under running water before cutting or peeling, even if you don't plan to eat the peel.
