3-4 months

Whole lemons can be frozen, but the texture will be softer when thawed. Lemon zest can be frozen in an airtight container. Lemon juice can be frozen in ice cube trays.

Signs of Spoilage

  • Soft spots or mushy texture
  • Visible mold growth
  • Discoloration (dark spots or unusual hues)
  • Unpleasant or sour odor
  • Dryness or shriveling

Room Temperature Safety

Perishable foods should not be left out at room temperature for more than 2 hours (1 hour if the temperature is above 90°F/32°C). This rule applies more strictly to cut lemons.

40°F–140°F (4°C–60°C)

While whole, uncut lemons are less susceptible to rapid bacterial growth at room temperature, cut lemons should be refrigerated within 2 hours. Always wash hands and surfaces before and after handling.

Expert Tips

Safe Handling

1

Wash hands thoroughly with soap and water before and after handling fresh produce.

2

Wash lemons under running water before cutting or eating, even if you plan to peel them.

3

Avoid cross-contamination by using separate cutting boards and utensils for produce and raw meat, poultry, or seafood.
