Pantry
1-2 years (unopened bottled); Unsafe beyond 2 hours (freshly squeezed)
Store unopened bottled lemon juice in a cool, dark pantry away from direct sunlight. Freshly squeezed lemon juice should not be stored at room temperature for more than 2 hours.
Refrigerator
6 months (opened bottled); 2-3 days (freshly squeezed)
Refrigerate opened bottled lemon juice immediately in its original container or a tightly sealed, non-metallic container. Store freshly squeezed lemon juice in a clean, airtight container.
Freezer
4-6 months
Lemon juice, both bottled and freshly squeezed, can be frozen. For convenience, freeze in ice cube trays, then transfer the frozen cubes to freezer bags or airtight containers. Freezing does not affect safety but may alter texture slightly upon thawing.
Signs of Spoilage
- Off-odor (sour, fermented, or yeasty smell)
- Mold growth on the surface or inside the container
- Significant discoloration or darkening of the juice
- Unusual cloudiness or sediment not normally present
- Bulging or leaking container (for bottled juice, indicates gas production from spoilage)
Room Temperature Safety
The 'Danger Zone' for rapid bacterial growth is between 40°F (4°C) and 140°F (60°C).
Promptly refrigerate or freeze lemon juice to keep it out of the danger zone. Always discard any juice that has been left at unsafe temperatures for too long.
Safe Handling
Always refrigerate opened bottled lemon juice promptly.
Discard freshly squeezed lemon juice if it has been left at room temperature for more than 2 hours (or 1 hour if the temperature is above 90°F/32°C).
Store lemon juice in clean, airtight containers to prevent contamination and absorption of odors.
Do not use lemon juice from bulging or leaking containers.
