Wrap fresh lemongrass stalks in a damp paper towel, then place in a plastic bag or airtight container in the refrigerator's crisper drawer.

Freezer

10-12 months for best quality

Chop or mince lemongrass, then freeze in ice cube trays with a little water or oil, or freeze whole stalks tightly wrapped in plastic wrap and then foil or a freezer bag.

Room Temperature Safety

Perishable foods should not be left out at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), this time reduces to 1 hour.
