Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Cooked lentil stew should be promptly refrigerated or frozen to minimize the time it spends in the 'Danger Zone' where harmful bacteria can multiply rapidly.
Safe Handling
Reheat all leftovers, including lentil stew, to an internal temperature of 165°F (74°C).
Do not leave cooked lentil stew at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), discard after 1 hour.
Divide large quantities of hot stew into smaller, shallow containers to cool more quickly before refrigerating or freezing.
Prevent cross-contamination by using clean utensils and containers for serving and storage.
