Room Temperature Safety
40°F–140°F
Perishable foods, including fresh produce like lettuce, should not be left at room temperature (between 40°F and 140°F) for more than 2 hours. If the ambient temperature is above 90°F (32°C), this time is reduced to 1 hour.
Safe Handling
Wash hands thoroughly with soap and water before and after handling fresh produce.
Wash lettuce under cool, running tap water just before eating, cutting, or cooking. Do not use soap or detergents.
Remove any bruised or damaged leaves before washing.
Dry lettuce thoroughly with a clean cloth or paper towel, or use a salad spinner, to help maintain crispness.
Prevent cross-contamination by keeping lettuce separate from raw meat, poultry, and seafood, and by using separate cutting boards and utensils.
