Store unwashed whole heads of lettuce in a plastic bag or airtight container in the crisper drawer of the refrigerator. Wash thoroughly under running water just before use.
Freezer

Freezing is not recommended for fresh lettuce as its high water content will cause it to become mushy and lose its crisp texture upon thawing.

Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Fresh lettuce should be refrigerated promptly after purchase and kept cold. Discard any lettuce left in the danger zone for too long.
Safe Handling
Wash hands with soap and water for at least 20 seconds before and after handling fresh produce.
Wash lettuce thoroughly under running tap water just before eating, cutting, or cooking. Do not use soap or detergents.
Remove any bruised or damaged leaves before storage or preparation.
Prevent cross-contamination by keeping lettuce separate from raw meat, poultry, and seafood, and by using separate cutting boards and utensils.
