Fresh longganisa should not be stored at room temperature. Refrigerate or freeze immediately.
Refrigerator
1-2 days
Store raw longganisa in its original packaging or in an airtight container on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods. Cook thoroughly before consuming.
Freezer
1-2 months
For best quality, wrap longganisa tightly in heavy-duty freezer wrap, aluminum foil, or place in freezer bags. Label with the date. While safe indefinitely, quality may decline after 1-2 months.
Signs of Spoilage
- Sour or off-odor
- Slimy or sticky texture
- Discoloration (e.g., grayish-brown or green spots)
- Mold growth
Room Temperature Safety
40°F–140°F (4.4°C–60°C)
Do not leave longganisa at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), do not leave it out for more than 1 hour. Discard any longganisa left in the danger zone for too long.
Safe Handling
Cook longganisa to an internal temperature of 160°F (71.1°C) as measured with a food thermometer.
Prevent cross-contamination by keeping raw longganisa separate from other foods. Use separate cutting boards, plates, and utensils for raw and cooked meats.
Wash hands thoroughly with soap and water for at least 20 seconds before and after handling raw meat.
Thaw frozen longganisa in the refrigerator, in cold water (changing water every 30 minutes), or in the microwave. Never thaw at room temperature.
