Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Cooked mac & cheese should be refrigerated or frozen promptly to prevent the growth of harmful bacteria. Discard any mac & cheese left in the danger zone for too long.
Safe Handling
Reheat all leftovers, including mac & cheese, to an internal temperature of 165°F (74°C) as measured with a food thermometer.
Bring sauces, soups, and gravies to a rolling boil when reheating.
Never leave perishable foods like cooked mac & cheese out at room temperature for more than 2 hours (or 1 hour if the temperature is above 90°F/32°C).
Avoid cross-contamination by using separate cutting boards and utensils for raw ingredients and cooked foods.
