Refrigeration is essential for safety and quality, especially once opened. Unopened cheese should also be refrigerated.
Refrigerator
3-4 weeks (opened); 2-4 months (unopened)
Wrap tightly in plastic wrap, foil, or parchment paper, or place in an airtight container. Store in the cheese drawer or warmest part of the refrigerator.
Freezer
6 months for best quality; safe indefinitely
Wrap tightly in heavy-duty foil or freezer wrap, or place in a freezer bag. Thaw slowly in the refrigerator. Texture may become crumbly after thawing, making it best for cooking.
Signs of Spoilage
- Visible mold (other than intentional molds on certain cheeses)
- Off-odor or sour smell
- Slimy or sticky texture
- Significant discoloration
- Excessive hardening or drying out
Room Temperature Safety
40°F–140°F
Do not leave Manchego cheese at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), do not leave it out for more than 1 hour, as bacteria multiply rapidly in the danger zone.
Safe Handling
Always wash hands thoroughly with soap and water before and after handling cheese.
Prevent cross-contamination by using clean cutting boards and utensils for cheese, separate from those used for raw meats or poultry.
If mold appears on hard or semi-hard cheese like Manchego, cut off at least 1 inch (2.5 cm) around and below the mold spot. Do not consume moldy soft cheeses.
