Peel and separate into segments. Remove as much white pith as possible. Freeze segments in a single layer on a baking sheet, then transfer to airtight freezer bags or containers. Can also be frozen as juice.

Room Temperature Safety

Do not leave cut or peeled mandarins at room temperature for more than 2 hours (1 hour if the temperature is above 90°F/32°C).
