Store unripe mangoes at room temperature until they yield to gentle pressure. Once ripe, refrigerate immediately.

Refrigerator

5-7 days (ripe, whole)

Store ripe, whole mangoes in the refrigerator. Do not wash until ready to eat. Cut mangoes should be stored in an airtight container.

Freezer

10-12 months (cut)

Peel, pit, and cut mango into slices or cubes. Freeze in a single layer on a baking sheet until solid, then transfer to airtight freezer bags or containers.

Signs of Spoilage

  • Soft spots or mushy texture
  • Mold growth (fuzzy white, green, or black spots)
  • Sour or fermented odor
  • Significant discoloration or darkening of the skin beyond normal ripening

Room Temperature Safety

Perishable foods should not be left out at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), this time is reduced to 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Unripe mangoes can be left at room temperature to ripen. Once ripe, or if cut, they should be refrigerated promptly to prevent bacterial growth.
