Pantry

Up to 1 week (unripe, until ripe)

Store unripe, whole mangoes at room temperature (68-72°F) until they yield slightly to pressure and develop a fruity aroma. Do not refrigerate unripe mangoes as it can stop the ripening process.

Refrigerator

5-7 days (ripe, whole); 3-5 days (cut)

Once ripe, whole mangoes can be stored in the refrigerator to slow down further ripening. Store cut mangoes in an airtight container in the refrigerator.

Freezer

10-12 months (for best quality, safe indefinitely)

Peel, pit, and cut mangoes into chunks or slices. Freeze in a single layer on a baking sheet until solid, then transfer to freezer bags or airtight containers, removing as much air as possible.

Signs of Spoilage

  • Soft spots or mushy texture
  • Mold growth (fuzzy white, green, or black spots)
  • Sour, fermented, or off-odor
  • Significant discoloration or darkening of the flesh

Room Temperature Safety

2-hour rule (1 hour above 90°F/32°C)

40°F–140°F

Do not leave cut mangoes at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), discard cut mangoes after 1 hour.
