Marinated fish must be refrigerated or frozen immediately to prevent bacterial growth.

Refrigerator

1-2 days

Store in an airtight container or tightly wrapped to prevent odors and cross-contamination. Place on the lowest shelf of the refrigerator to avoid drips onto other foods.

Freezer

3-8 months

For best quality, freeze in airtight, freezer-safe packaging. Thaw in the refrigerator, cold water, or microwave, never at room temperature.

Signs of Spoilage

  • Strong, sour, or 'fishy' odor
  • Slimy or sticky texture
  • Dull, faded color
  • Loss of firmness or elasticity
  • Mold growth

Room Temperature Safety

2-hour rule (1 hour if ambient temperature is above 90°F/32°C)

40°F–140°F (4°C–60°C)

Perishable foods, including marinated bangus, should not be left at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), do not leave out for more than 1 hour. Discard any marinated bangus left out longer than these times.
