Freezing mayonnaise is not recommended as it causes the emulsion to break, resulting in an oily, separated product upon thawing with an undesirable texture.
Signs of Spoilage

- Unusual texture (slimy, watery, or excessively thick)
Room Temperature Safety
40°F–140°F (4°C–60°C)
Mayonnaise should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), it should not be left out for more than 1 hour, as bacteria multiply rapidly in the danger zone.
