Mimolette should be refrigerated once purchased, especially if opened. Storing at room temperature for extended periods is unsafe.

Refrigerator

3-4 weeks (opened)

Wrap Mimolette tightly in plastic wrap, then an additional layer of foil or parchment paper. Store in the cheese drawer or warmest part of the refrigerator to maintain quality and prevent drying.

Freezer

6 months

Wrap Mimolette tightly in plastic wrap, then foil, and place in a heavy-duty freezer bag. Thaw slowly in the refrigerator. Note that freezing may alter the texture, making it more crumbly.

Signs of Spoilage

  • Visible mold (beyond surface mold that can be safely cut off on hard cheese)
  • Off-odor (sour, ammonia-like, or unusually strong)
  • Slimy or excessively soft texture
  • Significant discoloration

Room Temperature Safety

2-hour rule (1 hour if ambient temperature is above 90°F/32°C)

40°F–140°F (4°C–60°C)

Do not leave Mimolette at room temperature (between 40°F and 140°F) for more than 2 hours. If the ambient temperature is above 90°F (32°C), do not leave it out for more than 1 hour.

If mold appears on hard cheese like Mimolette, cut off at least 1 inch (2.5 cm) around and below the mold spot. Do not taste the cheese to check for spoilage.
