Not recommended for freshly minced garlic. Unopened commercial jars: until 'best by' date.
Freshly minced garlic should be refrigerated immediately. Store unopened commercial jars in a cool, dark place. Once opened, refrigerate immediately.
Refrigerator
1 week (freshly minced); 1-2 weeks (opened commercial jar); 7 days (homemade garlic in oil)
Store in an airtight container. Homemade garlic in oil must be refrigerated immediately and used within 7 days to prevent botulism. Discard any homemade garlic in oil left at room temperature for more than 2 hours.
Freezer
10-12 months
Freeze in small portions in an airtight container or freezer bags. Can be frozen plain or in oil.

Room Temperature Safety

Minced garlic, especially when mixed with oil, is highly susceptible to bacterial growth, including Clostridium botulinum. Never leave homemade garlic in oil mixtures at room temperature. Discard any such mixture left out for more than 2 hours.
