Unsafe

Fresh mozzarella cheese is a perishable dairy product and must be refrigerated to prevent bacterial growth.

Refrigerator

1 week

Store in its original liquid (brine) or in fresh water in an airtight container. Change water daily if stored in water. Keep tightly wrapped after opening.

Freezer

Not recommended (quality suffers)

While safe indefinitely at 0°F, freezing is not recommended for fresh mozzarella cheese as it significantly alters its texture, making it crumbly and watery upon thawing. If frozen, it is best used in cooked dishes after thawing.

Signs of Spoilage

  • Sour or off odor
  • Visible mold (white, green, or black spots)
  • Slimy or sticky texture
  • Discoloration (e.g., yellowing, pinkish hue)
  • Puffy or bulging packaging

Room Temperature Safety

2-hour rule (1 hour if ambient temperature is above 90°F/32°C)

40°F–140°F (4°C–60°C)

Fresh mozzarella cheese should not be left at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), it should not be left out for more than 1 hour. Discard if left out longer.
