Room Temperature Safety

The 2-hour rule applies: Perishable foods, including opened condiments, should not be left at room temperature (between 40°F and 140°F) for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

While mustard is acidic and less prone to rapid bacterial growth than some other foods, it should still be refrigerated after opening. Minimize the time opened mustard spends outside of refrigeration, especially during meals.
