Napa cabbage requires refrigeration to maintain freshness and safety. Room temperature storage significantly shortens shelf life and increases spoilage risk.
Refrigerator
1 to 2 months
Store whole, unwashed napa cabbage in a plastic bag in the crisper drawer of the refrigerator. Do not wash until ready to use to prevent premature spoilage. Once cut, wrap tightly and use within a few days.
Freezer
10 to 12 months
Blanch napa cabbage before freezing. Wash, chop, and blanch in boiling water for 2 minutes, then immediately cool in ice water. Drain thoroughly, pack into airtight freezer bags or containers, removing as much air as possible.
Signs of Spoilage
- Wilting or limp leaves
- Yellowing or browning of leaves
- Soft, mushy, or slimy spots
- Off-odor or sour smell
- Presence of mold
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
To ensure safety, napa cabbage should be refrigerated promptly after purchase and kept out of the danger zone. Discard any napa cabbage left at room temperature for longer than the recommended time limits.
Safe Handling
Wash hands thoroughly with soap and water before and after handling napa cabbage.
Wash napa cabbage under running water just before use. Remove any outer leaves that are damaged or discolored.
Prevent cross-contamination by keeping napa cabbage separate from raw meat, poultry, seafood, and eggs.
Use separate cutting boards and utensils for produce and raw animal products.
Refrigerate cut napa cabbage promptly in a clean, covered container.
