Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C). Perishable foods should not remain in this temperature range for extended periods.
Refrigerate or freeze wet nixtimalized corn (masa) promptly after preparation or purchase. Discard any masa left in the danger zone for longer than the recommended time limits.
Safe Handling
Keep nixtimalized corn (masa) refrigerated or frozen until ready to use.
Prevent cross-contamination by washing hands, utensils, and surfaces that come into contact with masa.
Cook masa thoroughly to an internal temperature of 165°F (74°C) if used in dishes like tamales, or ensure tortillas are fully cooked.
Do not leave masa at room temperature for more than 2 hours (1 hour if ambient temperature is above 90°F/32°C).
