For best quality and safety, fresh okra should be refrigerated promptly. Short-term storage (1-2 days) in a cool, dry place may be possible but is not ideal.
Refrigerator
2-3 days
Store unwashed, dry okra in a paper bag or loosely wrapped in plastic in the crisper drawer of the refrigerator. Do not wash until ready to use.
Freezer
10-12 months
For best quality, blanch whole or sliced okra for 3-5 minutes, then cool rapidly in ice water. Drain thoroughly, pat dry, and pack into freezer-safe bags or containers, removing as much air as possible.
Signs of Spoilage
- Slimy or sticky texture
- Soft spots or mushiness
- Mold growth
- Off-odor
- Discoloration (darkening or black spots)
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Fresh okra should be refrigerated promptly after purchase. Discard any okra left at room temperature for longer than 2 hours (or 1 hour if above 90°F).
Safe Handling
Wash hands thoroughly with soap and water before and after handling fresh produce.
Wash okra under running water just before preparing or eating. Do not use soap or detergents.
Avoid cross-contamination by keeping fresh produce separate from raw meat, poultry, and seafood.
Use a clean cutting board and utensils when preparing okra.
