Once opened, UHT milk must be refrigerated immediately to prevent bacterial growth. It is no longer shelf-stable.

Refrigerator

7-10 days

Store in the coldest part of the refrigerator, typically the back of the top shelf. Keep tightly sealed.

Freezer

3 months

Freeze in airtight containers, leaving headspace as milk expands when frozen. Thaw in the refrigerator. Quality may be affected (separation, graininess) but it remains safe.

Room Temperature Safety

The 2-hour rule applies: Do not leave perishable foods, including opened UHT milk, at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Promptly refrigerate opened UHT milk to keep it out of the danger zone and minimize bacterial growth. Discard any milk left out too long.
