While whole, unwashed peppers can be stored at room temperature for a very short period (1-2 days) in a cool, dry place away from direct sunlight, refrigeration is strongly recommended for optimal freshness and safety.
Refrigerator
1-2 weeks
Store whole, unwashed orange peppers in a plastic bag or the crisper drawer of your refrigerator. Do not wash until ready to use.
Freezer
8-12 months
Wash, core, and remove seeds. Slice or dice peppers as desired. Blanching is optional but can help retain quality. Pack tightly in airtight freezer bags or containers, removing as much air as possible.
Signs of Spoilage
- Soft spots or mushy texture
- Wrinkled or shriveled skin
- Mold growth (fuzzy white, green, or black spots)
- Discoloration (dark spots or dullness)
- Off-odor or sour smell
Room Temperature Safety
40°F–140°F (4°C–60°C)
Do not leave cut or cooked orange peppers at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), do not leave them out for more than 1 hour, as bacteria multiply rapidly in the danger zone.
Safe Handling
Wash hands thoroughly with soap and water before and after handling fresh produce.
Wash orange peppers under running water just before eating, cutting, or cooking.
Use a clean cutting board and utensils to prevent cross-contamination, especially if also handling raw meat, poultry, or seafood.
Refrigerate cut or cooked peppers promptly within 2 hours (1 hour if the temperature is above 90°F/32°C).
