Pantry
1-3 years (dried, for best quality)
Store dried oregano in a cool, dark, dry place away from heat and light in an airtight container. While dried herbs do not spoil in a way that makes them unsafe, they lose potency over time. Fresh oregano should not be stored in the pantry.
Refrigerator
1-2 weeks (fresh)
Store fresh oregano by wrapping the stems in a damp paper towel and placing them in a plastic bag, or by standing them upright in a glass of water, loosely covered with a plastic bag. Store in the crisper drawer. Dried oregano is not typically refrigerated.
Freezer
10-12 months (fresh)
To freeze fresh oregano, chop leaves and freeze in ice cube trays with water or olive oil, then transfer cubes to a freezer bag. Alternatively, freeze whole leaves on a baking sheet and then transfer to an airtight freezer bag. Dried oregano is not typically frozen.
Signs of Spoilage
- For fresh oregano: wilting, darkening, sliminess, mold growth, or an off-odor.
- For dried oregano: significant loss of aroma or flavor, clumping (indicating moisture), or visible mold (if moisture was introduced).
Room Temperature Safety
40°F–140°F (4°C–60°C)
Fresh oregano should be refrigerated promptly after purchase. Dried oregano is shelf-stable at room temperature.
Safe Handling
Wash fresh oregano thoroughly under cool running water before use.
Prevent cross-contamination by keeping fresh herbs separate from raw meats, poultry, and seafood.
Ensure dried oregano containers are clean and completely dry to prevent moisture and mold growth.
